Honey

We produce the following types of honey :


Chestnut : fairly liquid consistency,.with a bright darkish brown colour : strong bitter flavour with a strong woody aroma

Acacia: Liquid in consistency, clear yellow in colour – almost transparent Has a very delicate flavour and a very refined and persistent aroma.

Thousand flowers: a grainy liquidy consistency, with a sweetish flavour and a bitterish aftertaste. The colour varies between yellowy-green and browny-blue. Produced between the months of May and September.

We suggest that our guests try the chestnut and acacia honeys together with Tuscan Pecorino cheese – a veritable delight!

The honey-making process:

The bees, living in wooden hives, find their food/pollen within a 3 km radius of the hives. They are usually self-sufficient, but during particularly cold and wet springs, their food is boosted by honey or syrup. Following the emptying of the honeycombs – at various times of the year depending upon the pollen and the area – the honeycombs are taken out of the hives and taken to our processing room. Here the frames are emptied of honey using centrifugal force. The honey is then filtered, put into casks to decant for 15 days in order that any impurities and air bubbles come to the surface, where they are removed. Sometimes, the filtering process needs to be repeated.
