| We ‘discovered’ horses in 1987: to begin with
just a herd of horses of no particular breed. Our intention was they act
as grass-controllers in the outlying area. Then it literally exploded
into a passion for these wonderful creatures. We love western riding: we
discovered Quarter Horses, and the decision to breed them just seemed to
be the next step along the way.

The decision to breed cattle was taken at the
dinner table! We wanted to produce meat - for ourselves and our guests
– of the highest quality: especially in the times of ‘mad cow
disease’. We chose two Tuscan breeds – the Cinta Senese pig and the
Calvana cattle. These were relatively unknown, but are now enjoying a
huge interest thanks to the good works of the "Slow Food"
Association.
