The product
The mousse is made with cheek meat from our own Cinta Senese pigs, which have roamed freely in the fields surrounding Borgo Corboli. It is minced and mixed with aromatic herbs and served in 80 gram jars.
Ingredients
Meat from the cheek of Cinto Toscano, thyme, chives, rosemary, sage, bay leaf, mint, fennel, lemon balm, salt, pepper.
Method
All the ingredients are minced and mixed together, put into jars and sterilised at 121 degrees for 35 minutes. Can be kept for up to 18 months in a cool, dry, dark place. Free from all artificial ingredients.
Characteristics
Flavoursome but sweet with hint of aromatic herbs, pinkish in colour, melts in the mouth.
Serving suggestion
Best eaten spread on toasted or fried sliced Tuscan bread.
