The product
The lard used in this product comes from our own Cinta Senese pigs, which have roamed freely in the fields surrounding Borgo Corboli. The lard is finely chopped and mixed with Calvana truffle. It is served in 80 or 180 gram jars.
Ingredients
Cinto Toscano lard, Calvana truffle, salt, pepper.
Method
The truffle is finely chopped and mixed with the lard, salt and pepper. The mixture is then put into jars and sterilised at 120 degrees for 35 minutes. The mixture can be kept for up to 18 months in a cool, dark, dry place.
Free from all artificial ingredients.
Characteristics of the Lard
Full flavoured, truffle aroma, pink colour with specks of black. The lard melts in the mouth, slightly granular in texture.
Serving suggestions
This is best eaten on slices of toasted Tuscan bread or on slices of fried polenta. Alternatively it can be served on fettuccine pasta: melt a couple of spoonfuls of the lard in a small amount of the pasta cooking water and pour over the cooked pasta.
